In a whole of a beef, there are approximately the following:
20-24 roasts (chuck, arm, rump, heel of round)
28 T-bone steaks or 24 New York and Tenderloin/filet Mignons
10 sirloin steaks
10 sirloin tip steaks or 2-4 roast depending on the size
28 rib-eye steaks
12 round steaks or tenderize into cube steak
short ribs
2 flank steak
stew meat
2-4 brisket (2 whole, 4 if cut in half)
approximately 150# of ground beef.
You can choose to have any of the cuts made into ground beef.
**please note that the size you choose to cut your steak can affect how many you get standard thickness is ¾” for steak and 2-3# roast**
It usually takes 5-6 weeks from the time of placing your order to picking up everything at the butcher shop in Fruita or Grand Junction, Colorado.
